Holy cow! My 89-year-old father said this is one of his new favorites. It was so delicious. I made it three times in a row. You actually can use any cut of chicken. Also, I found that orange marmalade works better than apricot. And I also put in a healthy pinch of red pepper flakes. So good!

I cooked it with orange marmalade and a pinch of red pepper. Over rice! So great!
